Polenta Zucchini Bake

1 tube pre made polenta
1 medium zucchini
1 28 oz jar oil free tomato sauce

Preheat oven to 375. Slice polenta and zucchini into 1/4 inch rounds. Spread a bit of sauce on the bottom of an 8x8 baking dish. Place a single layer of zucchini or polenta (doesn't matter which one you use first). Spread a bit of sauce, then add a single layer of the opposite ingredient. Continue layering until all ingredients are used, saving a bit of sauce for the top.

Bake for 25 minutes, uncovered! Serves 3-4 or 2 with leftovers.

The past few weeks, I've been enjoying the following sandwich at least once a day:

- toasted whole wheat bread (or pitas, or tortillas... Whatever works)
- mashed avocado spread on like butter (I use a guacamole product as avocados are very expensive right now)
- sauerkraut

I'll often put black pepper and/or tobacco sauce on this sandwich, so feel free to add on or modify :D

P.S. Because of the avocado, I don't believe this is an ideal snack for those who want to lose weight (I'm trying to gain weight, which is one reason why I eat so many of these!)

Three good foods together:

rice, black beans and spinach. Oh I added hot sauce too.

I wish I had some sauerkraut. :)

Organic Farro (At Market Basket here in New England..boil for twenty minutes).
Greek seasoning (Premade McCormick)
grape tomatoes cut in half

Mix well.

My absolute favorite grain/starch. It is super delicious with bits of sliced avocado. But with the avocado it's a trigger food for me, so I don't use it.

'Nother good one:

Open a can of black beans, drain, rinse.
Defrost a bag of corn.
Mix.
Squeeze a lime and dice up some cilantro, salt (if desired) and a dash of cayenne if you like it spicy!

As always, an avocado makes it yummy, but also adds fat..so perhaps not for those trying to lose weight.

Whole grain toast, a bit of avocado and - believe it or not - a thin layer of tomato paste! Absolutely amazing flavor! :-)

My lazy-girl variation of this recipe for zucchini pasta/spaghetti. :)

** Steam julienned zucchini. I use a potato peeler-like tool for this and chop leftover bits into chunks--they look like gnocchi; you could also use a potato peeler and make fettuccine or just chop everything into small bites for gnocchi.
** Slice a pound of campari tomatoes in half (or use half a container of Pomis). Place in blender with a small can of tomato paste. Add desired spices: I used basil and oregano.
** Heat tomato sauce until boiling, simmer for a few minutes.
** A sweet potato makes a nice addition, too. Great flavor and it helps soak up some of the wateriness.
** Toss together & enjoy! :-D

Nuke the potato. I use frozen corn heated in a small pot while the potato is nuking, seasoned with pepper, cumin, and garlic powder. The salsa here is just Pace Picante Sauce. I know, high sodium, what can I say... I had a craving for some. Use what you like.

Butternut Squash Soup

1 butternut peeled and chunked
1 med onion diced
1-2 cloves garlic

Put in a pot.
Cover with water.
Boil until soft.
Stir with immersion blender.
Done.
Add Sea salt/pepper to taste.

Family Favorite Butternut Squash Dessert
1 butternut peeled and chunked
2 gala apples peeled and chunked
Raisins or dried cranberries (optional)

Put in a baking dish.
Cover.
Bake @ 350 for 45 mins or until soft.
Done.
Add cinnamon to taste.
