I, too, have been curious about this. Luckily, I can get a store-brand organic ketchup that's reasonably affordable and doesn't contain HFCS (thank you, Wegman's!). But, I'm a cheapskate at heart, and think I could make one just as tasty, and cheaper. I looked a little online - I'm assuming you don't want to start with fresh tomatoes - and here's what I've found (note: I have not tried any of these):

Instant Catsup http://www.cooks.com/rec/doc/0,1810,156167-227205,00.htm;

Catsup http://www.cooks.com/rec/doc/0,1910,151183-229192,00.html;

and the intriguing Apple Catsup http://www.cooks.com/rec/doc/0,1919,157185-235205,00.html

I'd love to hear from someone who has a simple, tried and true recipe.

1 6-ounce can tomato paste
1/4 cup water
1/4 cup maple syrup
2 tablespoons cider vinegar
1/2 teaspoon ground cumin
1/4 teaspoon dry mustard
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Blend the tomato paste, water, syrup, vinegar, cumin, mustard, cinnamon and cloves together in a blender until very smooth.

Refrigerate in a tightly sealed container. Will keep for one month.

It's the one I've used for a couple of years. Have actually weaned off DF from the commercial (HFCS) stuff -- he said it couldn't be done! :D

Hi eaufraiche703,

I've been thinking about making my own catsup, but didn't have a recipe. I think I will try 141 by 141's recipe. Thanks for posting the recipe 141 by 141.

141 by 41, I made this the other day. I didn't have maple syrup, so I subbed 2 1/2 TBS brown sugar and 1 TBS water. It is very good. :-D Thank you for posting your recipe.

eaufraiche703, Weggies is great, but can be expensive, and lately, there's so much emphasis on prepared foods. It's still a great resource, though, for things I can't buy at the public market or other stores. I wish I could do all my shopping there, but I'd have to go back to work. :shock:

yes, 141, this is a great recipe!

Janet, I miss Wegman's consistently excellent produce, their own label products (such a vast array), AND some of that prepared food. Just the best grocery store. And, they're always listed as one of the best companies to work for in America.

Anybody else shop the Wegman's in Princeton?

I just noticed a ketchup recipe on Bryanna Clark Grogan's website: http://veganfeastkitchen.blogspot.com/2008/10/vegan-mofo-easy-fruit-sweetened.html

It makes 1 quart, so if you go through ketchup quickly, it may be a good option.
