My Hubby came up with this and boy is it good!!!!!
Bean & Corn Pico de Gallo
1 large tomato Small cubed
1/4 red onion large minced
1 clove garlic small minced
1/2 Green pepper small cubed
1/2-1 Jalapeno minced (optional)
1/3 cup frozen or fresh corn
1/3 cup Blackeyed peas (drained and rinsed)
1/3 cup cilantro chopped
juice of 1 lime
salt and pepper to taste
