 Post subject: Does anyone have ideas for healthy "bites" ?

Anyone have any ideas for healthy bites? I will be going to a funeral soon with a family gathering afterwards. The close family has been eating really poorly. Most eat SAD, so I want to come up with some things that look familar, but that have more nutrients. I need to be able to make it a head of time and am worried about drying out, soggy, etc.

I was thinking some hummus/veggie/pinwheels?? Most won't know what hummus is, so the flavor needs to be simple.

Maybe stuffed cherry tomatoes? But with what for stuffing?

What about something like a sliced cuke, or other veggie topped with something?

Raw veggie/fruit on picks?

I just can't think, my brain is fried.

Any ideas, would be appreciated!

I'm sorry to hear about your loss.
I think you have some great ideas!
Have you checked out the fat free vegan site? She has some yummy looking appetizers. http://blog.fatfreevegan.com/category/a ... s-and-dips
She has mushrooms stuffed with pesto mashed potatoes, maybe that stuffing would be nice in the cherry tomatoes.
What about simple cucumber sandwiches, bread/hummus/cucumbers?
You could do tortillas with salsa, maybe guacamole and a bean dip too.
Does it have to be finger foods? Otherwise you could make a couple of salads, maybe potato and pasta.
Veggies & dip is easy.
Is sushi too weird for them? If not, to save time, you could order some from a restaurant.

A veggie tray is always appreciated.
Paper plates, cups and ice are also handy for families and bottles of water in ice chest.
Fresh fruit tray or just pick,up apples n bananas.

How about some tortilla roll-up type creation? Use hummus, some lettuce? Have you tried the guacamole made with peas -- it is delicious and honestly, tastes just like guacomole - spread that in the tortillas with some no-fried beans and roll it up and slice it into 1 inch slices. Everybody should love that.
