I finally found the forum or area to ask simple questions to others that have gone the vegan route and taken their large family with them. I know a semi-gentle weaning may be the best avenue. Ha, starting with day 1 menu and manipulating it a bit.
History: I am a life long vegetarian but due to family stresses and children and so forth on and off at times. lol Now we never left the direction of whole foods, never huge restaurant attendants or junk food people. My spouse is more apt to do that but not near the standard American diet. Food is a large part of our family lives we garden together and cook together and always eat our meals together.
However, my spouse is overweight, has asthma and high blood pressure and NO energy at all. He had a blood flow test, blood tests, and EKG and they says he is low risk for heart problems save his weight. Not sure I agree but I don't have an MD behind my name. The drugs he is taking alone bother both of both of us. He works at a desk and gets zero exercise save yard and garden work. He won't either not going there.
As for myself, I had blood pressure issues last year and the doctor prescribed meds I never took. I got rid of the processed foods in the home and most all the meat and suddenly I was back to an unusually healthy blood pressure level. She knew I was going that route. lol Otherwise no health problems save some aches and pains that are cropping up oddly. Finger joint swelling and other joint issues.
Could it be the milk and oils? We use a large amount of coconut and olive oils, along with walnut and grape seed oils. I love to exercise and dance, enjoy yoga although it has been a while since I was doing it regularly, mostly hit and miss. When we met I was into competition weight lifting.
Our current diet is all whole organic foods, raw milks, I make yogurts and cheeses or buy raw. I grind fresh grain and prepare all our pastas, breads, and cereal products. I mentioned I am a gardener and have around 1000sq feet of available garden space. We eat a lot of organic produce. I cook from all cultures but enjoy Hindi and Asian best however I can manage just about anything. It will actually be fun to see what I can create with this new challenge!
But vegan?! Ugh... lol Again, I know I can, but I enjoy our chickens and still need to understand the chemistry behind the research. Does it matte that all our dairy is raw? So I could use directions to a board or boards. It may be silly questions, but still I know they will crop up.
Ah, current family structure husband, wife, two in college students, one that fights weight issues, both living at home, two teens, two pre-teens and one four year old for a total of nine. Two are grandchildren here for the summer. My eldest, a research biologist, is also vegetarian but not vegan
Okay, there is a run down of what I am looking at, with my focus on mainly my husband's health issues. Which means supplying him with food for work each day. That is another issue all together.
