I'm doing the same routine. Carrying the trays out to my greenhouse and in again at night. At the rate they'll all growing, we'll have a jungle soon
The routine I now have is to accommodate my particular eating style which is higher volume, particularly at night. On the regular plan and even MWL I eat too much food.
I've now looked into how much calories the food has I'm eating and come up with the below routine. I know that I need to have a deficit of 500 cals/day to lose half a kg per week. That knowledge helps me to not eat anything extra (except vegies/pumpkin), as even just a little extra will delay my weight loss that week. I don't count calories but knowing how much calories foods have, is a really strong disincentive for me to eat extra food or higher calorie things. I also choose the lower calorie starches like Kumara, potatoes and rice, over pasta or bread. I try not to use salt or salty/sweet condiments, as it's an appetite stimulant and mine doesn't need any help
I eat pumpkin and left over vegies for breakfast.
For lunch I eat up to (often less) 300g starch (not pasta) plus 3 - 4 soup ladles of vegie stew or steamed vegies. I often eat carrot sticks (and broccoli/cauli stalks) while preparing lunch. In fact carrot sticks have become my favourite food together with pumpkin.
At dinner I eat the most. Carrot sticks, 200g potatoes, vegie stew, pumpkin, then 100 - 150g brown rice plus up to 2 fruit for "dessert". Often a cocoa.
For the last 2 weeks I've lost 0.5 kg per week with this routine. I now want to add in some beans (half cup at lunch time) and learn to eat a bit less volume at dinner.
As to your question if I'm finding it easy? Eating on plan, yes, not eating too much at night, not yet
