Jeff,

I just listened to a Dr. Esselstyn lecture - he stated that fructose consumption in the form of juice and smoothies injure the endothelium.

Any idea how/why this happens (triglycerides?) and is there actual proof that it does ?

Hearing it from him is convincing enough for me to severely limit consumption - but I would like to understand well enough to explain it to others.
