I was inspired by one of Boots' photos she posted quite recently, so last night I made rice, beans, veggies, and sweet potatoes. It was SO GOOD!

Beans + veggies

2 cups red kidney beans, soaked, drained, and cooked, and drained again!
1 red onion, chopped
2 cups chopped portobella mushroom
2 green bell peppers, chopped
1 habanero, minced (optional)
1 cipotle chile pepper, minced (optional)
1 tsp dried oregano

Cook the onions and habanero in water until well cooked. Add the mushrooms and cook a little more. Add the rest of the ingredients and cook until done!

Habanero-thyme Rice

(Aptly named the "Good luck keeping this in the refrigerator rice")

1 part short-grain brown rice to 2 parts veggie stock (homemade is best)
a couple springs fresh thyme
1 minced habanero, or any other pepper

Everything goes into the pot. Bring to a boil, partially cover, and simmer for 45 minutes, until well cooked. Well worth the time and effort!

I was a huge coffee lover..Have you tried Teeccino? it is an herbal beverage that you brew like coffee..its caffeine free..and it comes in flavors..my favorite is Mocha..I brew a pot every morning and enjoy it with soy creamer...it is good hot or cold(like iced coffee)

I hear you about sugar...I loved my sweets before McDougalling...in Jeff's FF DVD he makes a pudding with mashed mangos and Cocoa wonderslim powder..it is really good for a chocolate fix..also he takes Majool dates and stuffs them with almond butter(pour off the oil that sits on top)...these are awesome..really sweet, but highly addictive...don't eat more than 2 :lol:

I've been suggested that many times...1) It is not GF (or so I hear) 2) It's not sold where I live.

But thanks for suggesting it!

Here's a soup I made that will cure whatever ails you. I try to do a fine dice on the vegetables.

Spicy Chickpea Soup

1 1/2 chickpeas soaked overnight
1 carrot, chopped
1 or 2 small ribs celery, chopped
1 onion, finely diced
2 cloves garlic, minced
1 hot pepper (I used habanero) minced
1 sprig fresh thyme
a small handful fresh parsley
2 bay leaves
a couple grinds fresh pepper

Place everything in a pressure cooker and cover with water. Cook for 1/2 an hour. When done, remove the thyme, parsley, and bay leaves.

I'm still around.

Afraid that I'm starting to put on weight because of lack of exercise / excess sugar in my diet. I'll figure out what's going on and fix it soon, since my body is crying out to be taken better care of LOL!

I'm still hanging in there.

For a while I was afraid of putting on weight, so I started to eat a lot more MWL and less regular plan. It seems to be going okay.

I am still having some issues related to IBS, and I don't know what I'm doing wrong. All I eat is fibre now, and yet I feel as if I am eating SAD again?! It's been nearly a decade! Maybe I am detoxing from cutting out sugar/caffeine. I don't know.

I hope everyone is doing well! Enjoy your weekend!

I mostly just read stuff, but I don't post very often.

Lately, I am experimenting with the slow cooker. I can post some recipes as I make them up! :nod:

I am still McDougalling but still doing lots of "excusalling". I keep doing that and I need to stop! But I am happy with life right now and I think I can get myself back in a good groove...I hope.

Hi Eri! It's good to see you too!

I got wheat gluten'd recently. I find the reaction is getting worse. It used to be stomach pain / hunger and now it's also headache, dry mouth, mouth sores, and rash :-(

So, I have been having a lot of green smoothie.

My dad made me a raw soup today (he is really interested in raw, however I am glad that he is not too motivated to do it). It was really good though, I would eat that more often. I am trying to eat more salad to try and stop myself from putting on weight. I graduated last June and now I have this wonderful but sedentary job. :angry: I think I just need to tweak my diet a little more and find some good exercise.

B: Mashed taters (Yes, I did), tea w/ sugar and almond milk
L: Green smoothie (cherries, blueberries, dates, spinach, and vega), smoothie (beluberries and vega), steamed broccoli, green tea
D: Salad and a baked sweet potato, more green smoothie
S: Spinach-paw-avocado soup, hot chocolate (vegan, but still not good)

If I don't drink the green smoothie with this gluten reaction, I find I am fatigued and get stomach pain again. So having it to sip on all day really helps. Hopefully, it will go away really soon.

I've been having some moments lately...thinking that I really should give the elimination diet a serious go. I am young but I feel like my body is falling apart. I am slowly losing the use of my hands. I am hoping that teaming this up with some relaxation efforts and some light exercise (such as yoga), I will be able to do something to help myself.

I am planning on breaking a rule, however. I will still have some things raw. I had trouble in the past with having enough calories, so, if I make a green smoothie with kale, prunes, and cherries, hopefully that won't hurt. Somehow, eating a cooked smoothie sounds horrific to me. If this sounds like this is going to fail before I start, please say so.

The added bonus of doing this is that it will keep my weight in check as well, which I suspect is causing some if not most of my current health issues.

So, here goes nothing.

LOVESKALE'S DOESN'T LOVE KALE ENOUGH JOURNAL!

I haven't been feeling well as of late, and as it turns out, I have low iron.

I am aware that the current reccomendations are higher than what we actually need, however, my levels are very low, and it doesn't explain a lot of the symptoms I've been having lately.

So, I used my trusty nutritional guide to find some high sources of iron. This is my "Loveskale's Doesn't Love Kale Enough Journal" because, as it turns, out, I haven't been eating enough of the good stuff!

Here are my current heavy hitters:

-black beans
-wild rice
-quinoa
-spinach

I just need to make sure that I include these more into my diet (especially the black beans) and I should be in good shape. It's a lot better than taking an iron supplement... *sighs* :roll:

I really just need to take better care of myself...

I think I'm getting over whatever virus I had. I was scared about that.

I am eating healthy, except for a special birthday I had recently, in which I have been eating leftover cake! :roll:

Otherwise, I am drinking water when I'm thirsty and eating healthy rice, beans, and veggies. Eating more iron rich foods when I do eat. I've also been eating more salads, which is surprising because in the past I have hated salads. I just use chopped tomatoes for a dressing. Is that cool?

Once I get my strength up (which should be soon). I shoudl be hitting the yoga mat. I try to make one good change at a time.

I just keep thinking that I am unhealthy, I KNOW what I am doing wrong, and it's insane to just keep doing the wrong things!

Aside from being extremely anxious, I am doing VERY well with my diet. I've had some chocolate cake because I just can't let that go bad. It probably explains the stress. I also need to get back into some yoga.

I've been really, really good about my diet lately.

Smoothie: Blueberries, cherries, kale, dates, and vega
Stir-Fry: Veggies and tofu served over rice; Salad: Spinach wtih cherry tomatoes (I don't like salad dressing).
Steamed broccoli
Drink: Water

I'm considering trying that gluten-free oatmeal and see how it effects me. I am still fairly nervous about it though. But it would be REALLY nice if I could eat it!

Morning success!

I realised that my worrying about GF oatmeal bothering me was just more stress. In fact, my biggest issue is stress. I could probably do everything right with my diet but if I am stressed, what have I accomplished?

So, from now on, I will try to eliminate stress. I will not listen to rock music going into work. I will learn to say "I don't care" (at the appropriate moments). I will make my room a serene place for me to relax (almost accomplished already).

I did yoga this morning and boy was I slow at it! I could only muster a couple of sun salutations. That's ok. Next week I'll do better.

I also drank water while other people made coffee. That is my biggest vice! :D
