Have you considered a three bean salad for them .. That is so easy just green beans , Kidney beans and garbanzo beans thrown together with some vinegar sugar and black pepper and some red onions and garlic .. refrigerate and serve. Yummm


Or another favorite of mine and would definately go with a Thanksgiving dinner is
Corn red onions, black beans and sweet peppers .. you can make this one warm or cold with a vinegrette You could even throw in some brown rice to make it more of a caserole type dish. IT is fast and so easy as corn is frozen or canned and black beans canned so all you ould have to chop is the pepper and onion. IT is pretty to look at to.. If you make it a cold salad you can add some diced tomato to it also. and since I bet you always or often have a pan of already cooked brown rice around.. TAAA DAAA!

KA- you are a genious! Beans, corn, onions, tomatoes...and...(drum roll please) KALE!!!!

It will be PERFECT!!!! I could hug you!!!

Turns out my health issues are from cutting out SALT. Truth is, I am a little girl who is floating around her ideal weight. I guess cutting out salt 100% is not a good idea, I just need to cut back on the amount.

Also, going cold turkey on caffeine was not a good idea also. So, I had decaf for a little kick.

I guess I just need to stop trying to be like everyone on the boards; SOS is a very good idea except for me, at least not right now. I once tried to make my portion sizes like what other people were reporting and I fell off the program because I wasn't eating enough.

So, for now, oil free, LOW salt, LOW sugar. It sounds good.

Hi Loveskale,

Here is a vegan recipe for "bacon" that you could pass to your sister. I subscribe to Jason Wyrick's Vegan Culinary Experience e-magazine and he included this recipe in one of his issues:

raw eggplant bacon
It has been so many years since I ate bacon that I honestly have no idea how close this is yet others tell me it reminds them of bacon. However, I do not know it is really good!

2 large eggplant, sliced in 1/2 inch slices
1/3 cup umeboshi vinegar
1 tbsp toasted sesame oil
2 tbsp olive oil
1/4 cup maple syrup

Mix all ingredients except eggplant.
Add eggplant slices and marinade overnight or at least a few hours.
Dehydrate at 115 degrees for 12 hours.

what you’ll need
Dehydrator
Knife

I have not tried it yet as I do not have a dehydrator. Also, I would want to find a way to accomplish this without the use of the oil. But, that is all part of the fun. I am thinking this could be accomplished on the lowest setting in a traditional oven on parchment with a substitute liquid for the oil. It would be fun to try.

It might not end up like bacon bacon, but it might be a fun crispy tasty treat to add to sandwiches or snack on alone.

Getting ready for tomorrow.

It seems that so many people are so accustomed to losing weight they take all the fun out of feasting days. People keep trying to tell me what to cook for Thanksgiving to make it "healthier". Thanksgiving is all about comfort foods so I am making a lot of starches.

EDIT: The people I'm reffering to are people who eat SAD or VAD food. That is, they do not eat healthy on a daily basis so they fret about feasting days. I used to be the type, so I was wrong to complain.

I worked a lot today, and I worked up a HUGE appetite.

B: Hashbrowns
L: Leftover rice and beans, and "cream" of mushrooms jerusalem artichoke soup. I added salt to the soup.
D: Tortillas, beans w/ kale and peppers, salsa, and guacamole. The tortillas and guacamole has salt.
S: HUGE red delicious apple, mochi (found out it has oil in it :-( )
D: Apple cider, lady grey tea w/ sugar, chamole tea w/ honey, water

Adding just the lady grey tea and the bit of salt is really helping with my headache/nausea. I am still tapering off the caffeine and doing good so far.

Today was a good success.

B: Hash browns
L: Leftover beans, kale, and peppers w/ salsa
D: Thanksgiving feast: Mushroom roast, dressing, basalmic brussel sprouts, mashed potatoes, mushroom-onion gravy, steamed cauliflour, and salad
D: Vegan GF carrot cake w/ ice cream
S: Red delicious apple, date oskri bar
D: Vanila-cream soda, chamomlie tea w/ honey

Back to my normal diet tomorrow. I noticed a difference in my body rigth away: it swelled up from all the salt, yuck. My face has been clear since cutting out all of the processed foods too. I have more peace of mind knowing that I can control these things.

I thought of this just this morning. Last summer I tried a bunch of challenges and failed, but I am thinking of trying one now, if only just for fun since I know I will be eating this way.

I call it...

The Unprocessed Kale Challenge

(Gotta keep true to my screen name)

Since I can't cut out salt and sugar 100% right off, I am cutting back on it for now. I'm going to see if I can do it for 30 days. I'm also cutting out caffeine, and going easy on the processed McDougall-legal foods I eat. That is, don't eat tortillas for lunch, have bread as a snack, and then pasta for dinner. That kind of thing, gotta keep some whole foods in there. The one thing that is assumed, is that this will be 30-days of doing just McDougall, so no VAD foods.

Today is off to a shaky start, since I am having a bad celiac reaction and I can't even tolerate water. However, I am preservering and I'm not going to eat the vegan ice cream in the freezer. :nod:

Hi, LK. It sounds like you know what you are doing. Your Thanksgiving Meal sounds lovely. I forgot that Canada has their Thanksgiving in October. When I moved to BC for a short while, it was on your Thanksgiving Day, so it brings back memories. Your mushroom bake, was it the main course? I will have to look at your recipes to see if it's on there. Did you cook for your dad too?

Wow, hug attack!

Yup, instead of just saying "Unprocessed Challenge" I decided to throw kale in, since I throw it in everything!

Despite not feeling well I am sticking to this challenge, not letting silly excuses and make bad food choices.

Day 1:

B: Mashed potatoes
L: Mashed potato/rutabaga
D: Mashed potato/rutabaga, and kale-onion soup
S: 2 apples, cashew larabar
D: Water, chamoile tea w/ honey

I was very conscious about the amount of salt I put on my food instead of blindly pouring it on.

At dinner I thought I was depriving myself because I couldn't really taste anything in it; I thoght it need more salt. However, I let it cool down a lot more and then I could taste the flavours. Mmmm....
