Hey, remember when you ate oatmeal as your starch for a Mary's Mini? I did not understand at the time but now I have fallen in love with oats. Savory oats that is, though making it w/ fruit is good too. One good thing about you being here this long is how much I have learned from you!

Hi Boots,
I really like the beautiful photos you've posted. The burger meal looks so good I think I'll make that for our dinner tomorrow night. Is that Mary McDougall's recipe?

It sounds like you're living life happily, McDougalling and exercising and doing just fine. If posting here is an ongoing part of it for you, that seems to me to be what the discussion board and journals are for. With such a tiny fraction of the world eating this way, one needs community.

Good night, sleep tight.

P.S. I wish I were in sunny California!

I may have missed it, but do you have a recipe for the starch casserole? I would love it if you could share it:)

Keep up the great work. I agree with the others, you inspire and teach us all:)

Hey ya'll :D

My starch casserole: I mix black beans, brown rice and sweet potatoes together into a mash with spices such as salt, pepper and chipotle powder. Sometimes I change out the beans and the rice and potatoes but to me I get to eat a lot of starches so I call it a starch casserole. LOL

I'm doing good. 2 nights ago I had some vegan cookies. I'm not sure what happened. There is really nothing to it. I was in the store. Told myself not to get the cookies and I've been doing so good and look what I'm doing and before I knew it I was sitting at home eating cookies. It was such a conscious effort. LOL...I didn't have any adverse reactions to the cookies so of course the next day the cravings were in higher gear and I wanted more cookies and ice-cream this time. I went through the same thought process but this time I was able to put the cookies and ice-cream down and not bring any home from the store. I did have 2 of my husbands vegan chips and decided they weren't that good anyways. It's funny how it happens sometimes. I'm so much more consciously aware of what goes in my mouth and what is food versus what is junk!!

It's a beautiful California day. I may go out for a bike ride or a walk. I love when the weather is like this. The birds are chirping, everyone is outside--just a lovely day.

Meal 1 (A+): corn on the cob
Meal 2 (A+): red bell pepper, hale to the kale salad, starch casserole
Snack(A+): watermelon

Hope everyone is doing good

Good job of avoiding falling into temptation a second time. It seems like the second time is the hardest because most of the time I end up thinking, "Well, I did this already, so I might as well do it again.". Then I'm all of a sudden eating junk regularly. It's sooo good that you didn't fall victim to that type of sabotage.

I'm really enjoying peoples journals who've been at this for a while. Good reading and lots of helpful tidbits along the way. Hope it's not to hot where you are. It's over 1000 in the valley today/ wimper.

Gosh Boots, you're not eating very much based on the last list of your meals for a day. Have you checked to see if you're consuming enough nutrients and calories? I know it's kind of heresy on this website to ask such questions, but just wondering.....That could be part of the reason for the cookie "attack", but good for you not succumbing to cravings the next day. Send some of that sunny California weather up to the Pacific Northwest!

Thanks for stopping by. If anything, I don't think my meals show how much I really eat. I eat a lot and I overeat to the point of being stuffed a lot. If I could fit in more food, I would. Thanks for your concern though. LOL

I'm trying to get a control on this overeating thing. I never thought I would have a problem overeating healthy food. If anyone has any suggestions let me know. It used to not be a problem when I was obese and lost weight easier but now being 30 pounds close to a healthy weight, it looks like I can not overeat and lose weight at the same time. I have to be diligent with every bite I put in my mouth. I think some of you will say eat more veggies. Well, I like my starch, LOL :-D

MMM starch. For the Hail to the Kale salad would you say it makes more dressing then the salad needs? I ask because on Chef AJ's post with the recipe she mentions it may not need all the dressing. Also in my last post I meant to say low 100's not 1000's lol.

Hey Boots,

I understand, I am also afraid of eating starches and gaining weight. I'm trying to eat more sweet potatoes instead of regular potatoes. Not that I think regular potatoes will make you gain weight, it's just that I ALWAYS peel them and I feel that can add a little.

I'm going to start eating a big salad in the evenings since I'm usually not all that hungry, but I need to eat something!

Maybe we can bounce ideas off each other, since I have I tend to eat just for the sake of eating.

Hi there. First off, I am so impressed. Just 30lbs off target? Wow!!!
Over-eating. Yip. I know about that one. I am in the process of 're-adjusting' my portion sizes. In general I use smaller plates and bowls now. And I also try to keep in mind that my fist is the size of my stomach. Having said that, I will eat until I no longer am hungry. But I am learning to pay attention to what my body is telling me. I won't eat beyond that 'not hungry anymore feeling now'. Also I find drinking around 2 litres of water daily really helps. Very often I mistake thirst for hunger. Also, when I make potato mash, I add celeriac or swede or even cauliflower, to bump the volume up. When I roast potatoes I mix in other root vegetables and roast them together. That really works for me. I hope this will help some. :-D
