This food is so easy to prepare. Tonight I opened up a can of no-salt black beans, put it in a pot with 1 pound of greens. Whole foods sales 1 pound of kale, collard greens and mustard greens for $1.99. Yup they do have some cheap stuff. While the beans and greens are cooking. Start a pot with boiling water and boil your brown rice, I used instant success boil in a bag rice--takes about 10 minutes to cook. Once your rice is done add it to your greens and beans. Once everything is cooked add in your spices--I put some salt and chipotle powder to taste. I then added some raw yellow onions and tomatoes to garnish it. So simple and so yummy!!
As I was cooking dinner, I made lunch. Indian food which had yukon potatoes, chickpeas, canned diced tomatoes, 1 pound of greens, raw onions, garlic all cooked together with garm masala, and curry powder. Taste great!!
It's so simple. I cooked these meals together and it took less than 30 minutes. No excuses people.
I'm walking everyday at work for 50 minutes at least.
I'm in a weight loss competition at work. Weigh in is in 2 weeks and we will weigh in every month. The winner takes home $250 I think. This is also helping me to stay accountable.
