Hello...other groundhog(g)s are on the way...so I'll hurry and post a recipe I plan to make for all of us tonight:
"WILD STUFF" is the name of this recipe:
1 chopped onion
1/2 cup sliced or whole almonds (can substitute something else like white hominy if you don't do nuts)
1/4 tsp. ground cardamom
" groundh turmeric
" ground cloves
" dried basil
" ground cinnamon
" black pepper
1 tsp. maple syrup
2 TBSPS. (wheat-free) soy sauce or Bragg's Liquid Aminos
2 TBSPS. chiken style seasoning from Healing Heart site (I'll include that recipe below-this is optional, but really improves the taste if added)
approx. 1/4 cup water for sauteing
3 cups frozen veggies (the style that has slivered carrots, corn, green peas, green beans--works best in this recipe)
Cover this and cook, covered, on low heat, checking often to add a small amount of water if necessary.
Cook 2 cups wild rice mix, or brown or white rice. Serve over rice, and top with thinly sliced tomatoes and/or dried or fresh parsley (optional).
This stuff will make the whole house smell REALLY GREAT...tastes real good too!!!!
***Here's the chicken-style seasoning from the Healing Heart Web site:
1 1/3 cup nutritional yeast
3 TBSP. onion powder
2 1/2 tsp. garlic powder
1 TBSP. salt
1 tsp. celery seed
1 1/2 TBSPS. Italian seasoning (sometimes I dont' have this...I've used 1 TBSP. each basil and oregano and it worked out fine)
2 TBSPS. dried parsley
Mix all together well and store in a jar or canister--add to stir-frys, soups, stews, gravies, veggie burgers and loaves, etc.
This stuff just improves the taste of everything.
I've started ordering my nutritional yeast from the net, in 5 lb. bags to avoid cross contamination with gluten/flour dust in health food store bins--we'll use that up before too long!
