 Post subject: Veggie question

Hi, all, I just started Wednesday morning, all is going well, btu I have a question - So, for the "Make Green and Yellow Vegatables one third to one half of your meal" I am wondering what folks do for breakfast. I love veggies, but not for breakfast. The past 2 mornings, I have eaten oatmeal with fruit. Still had tons of veggies all day, but not sure I can incorporate them into breakfast.

I don't eat veggies for breakfast either. I have one of my two fruits with breakfast, and the other for a snack later. I have big portions of veggies with lunch and dinner.

You certainly don't have to have veggies for breakfast, but sometimes I do. Often I'll do a potato scramble with onions, mushrooms, green peppers, carrots and broccoli sizzle sauted in a skillet and that to simply potatoes, or ore ida o'brien potatoes, cooked without oil (or you can use fresh potatoes). We like to have this on the weekends because it's not a quick fix.

The other thing I sometimes do, just to increase my veggies, is to add shredded zucchini to my morning oatmeal. It doesn't add a whole lot of taste to the oatmeal, but it does increase the nutrient content.

But, truly, don't worry about it if you don't want to have any veggies for breakfast, you really don't have to.
