Many people have never tried whole oat groats but they are actually pretty tasty. You can cook them up for a breakfast cereal (takes quite a bit longer), but I like them in this McDougallized version of a Bob's Red Mill recipe.

Oat Groats Pilaf
1 cup whole oat groats
1 medium onion, chopped
1 cup sliced mushrooms
Pepper to taste
2 tablespoons fresh basil
2 medium tomatillos, chopped
1 green bell pepper, chopped
2 cups vegetable broth

Heat a non-stick pot or skillet* over medium heat, add oats and cook, stirring for about 4 minutes.
Add onions and mushrooms and cook for about 4 more minutes.
Cover with broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 40 minutes.
Meanwhile, chop remaining vegetables. Once oats are cooked, stir in veggies, add pepper to taste and serve immediately, or refrigerate and serve cold.

*I use a cast iron skillet or a Le Creuset casserole dish. Both are well-seasoned from years of use and require no oil at all.
