 Post subject: One Week Into Low Fat High Starch Diet - Feeling GOOD!

Today, for the first time in ages, I woke up feeling wide awake.

My transition to the high starch diet has been pretty strange - as I posted earlier, I gained 8 pounds in the first 6 days. It's now Day 7 and I've gone down a pound on the scales.

My sleep has been AWFUL since the start. I have been tossing and turning til the wee small hours unable to fall asleep all week, even though I have felt extremely tired. I've been moody and lethargic throughout the days, and have been questioning the validity of the diet.

Last night I fell asleep quite quickly. I woke up at 4am and couldn't get back to sleep for ages, but when I woke up at 8am I felt amazing for the first time in a long time.

That energy has remained with me all day. I am doing extra things that I would normally procrastinate. Like bringing in my wheelie bin from the street - I usually leave it until I'm passing, which can be a few days sometimes. However, not only did I bring in my own bin today, I brought in the bins for the whole street - 7 bins. I just felt like doing it - it's like having energy to burn, whereas normally it is like having no energy, so I stay still so as to refrain from running out of what little energy I have.

I have been vegan for 19 months so it's not the dairy or the meat - the only difference in my diet is higher starch and zero added fat and zero fatty foods. (Of course dairy and meat are full of fat).

I did not realise that fat gave us zero usable energy. It just stores itself away on our bodies. It's the starch that we burn. Wow! I am burning it today, and I'm loving it!!

I'm so grateful to know this stuff.

My reason for doing this diet was to increase my energy, and I know that when my energy increases, my weight will drop off.

Looks like its starting already.

I'll never look at fat in the same way again.

When I am eating really well, I find I need less sleep because the sleep I get is more restful. Took me a while to figure that out, because I was getting annoyed with waking up really early and not being able to get back to sleep. I adjust my schedule and have more awake time to do fun stuff. :-D
