I've been on a potato chip kick lately. I ate ten pounds of the golds as microwaved chips (no salt) in ten days. (The chips go great with black beans and kale!) So that's a pound a day, but how many potatoes :? ??

I eat about 25-30 lbs of "roots" per week. That total includes about two-thirds potatoes (Russett, reds, golds, whites, purples) and one-third yams and sweet potatoes.

Because of my particular medical issues, potatoes are the core of almost every meal I eat.
