@ Becky, sounds like you are really having fun with the variety and healthy too. It all sounds wonderfully delicious. :)
On 7/8/2013, I decided to change my diet to a "mostly" WFPB diet. I have always been somewhat lean and muscular due to being a lifelong exerciser. Change in diet due to feeling crummy all the time despite a healthy outward appearance. Image

Is this healthy? If yes, I will pay you to make me one and send UPS. I am PM'ing you my physical address now.....j/k Image. The foods all look wonderful. I wish there was like a national chain of McDougall friendly restaurants where you could just go and buy meals and not have to worry about if they were healthy or not. I would be willing to pay more for the food in exchange for the variety plus the effort and work that go into making these things. I hate to say this on a public forum but I am a mama's boy. My mother did everything for me even after I became an adult so there was never any incentive for me to learn how to cook. She is now going to start cooking me pots of cabbage and greens. I know I sound pathetic, LOL! I can do very simple things. I wish I could convince my mother who is almost 70 to change to this WOE. She is encouraging me but refuses to change herself but I will always love her no matter what. I do think a McDougall type diet would help her to live longer and she could maybe get off some of her meds but her choice.

ROFL!! I know, right?!? While this Lemon-Lime Teasecake is made with whole foods and no added oils, and the surprise ingredient is cooked millet, it is very rich because it also includes cashews. And then, depending on what you use for the crust, the richness-factor can really skyrocket. Definitely to be reserved for very special occasions.

It would be great if there were a chain of restaurants that served nothing but McDougall friendly foods, wouldn't it? I keep hoping for the day, too!

You sound like a very good son, eXtremE, and maybe your good eating habits will be an example for your mother and eventually she will give this WOE a try! :)

I was wondering when you would return Becky with some new ones. Boy, that Fresh Cherry-Vanilla Bread Pudding looks delicious. The Golden Potato Soup looks good also and like something maybe even I could do. LOL What do you eat on a day to day basis when you are not making all these great looking recipes or do you make and eat some of these things over and over on a regular basis? Just read your blogger profile. You and DH seem like y'all live a fun, adventurous life.

Hi eXtremE! Nice to hear from you again! If you ever end up getting the "1000 Vegan Recipes" cookbook, you'll have to let me know if you try some of the recipes. (Maybe you're Mom would like it!) For the most part, my husband and I eat pretty simply. Breakfast is usually oatmeal of some sort (old fashioned oats, Scottish oats, or steel cut oats); homemade oil-free granola; whole grain bagels with oil-free hummus; oil-free vegan pancakes. Every breakfast includes lots of fresh fruits. Lunch is most often left over dinner, but sometimes we'll have sandwiches and soup, using whatever veggies are in the fridge for the sandwiches, and we like the McDougall cups for soup. Our "regular" dinners consists of stir fries, pasta with marinara, enchiladas, steamed veggies of all kinds, baked potatoes, chili, lots of different soups, lots of salads, homemade veggie burgers, oven baked fries. Yes, there are some favorites that show up in the menu time and again, and we draw from a number of sources for that: The McDougall recipes, the "1000 Vegan Recipes" recipes, my own concoctions, and various other vegetarian and vegan cookbooks I have. DH and I do have a fun and adventurous life. We love our full time RV lifestyle and totally appreciate the opportunity we have to see this country. We won't be able to do this forever, but for now we are enjoying the ride. The stuffed bell peppers look really good Becky. I know I would enjoy that Cream of Broccoli Soup too. What will you do after you have tried all 1000 recipes? Start over? :D

Hi eXtremE! Hahaha, no I don't believe I will start over once I get all 1000 recipes tried. :eek: This project will be a once-in-a-lifetime effort, I'm sure!

Hey Becky, I was waiting on you to return. That "Seitan & Scalloped Potatoes Casserole" looks scrumptious. I am surprised you and hubby both are not fat eating all the delicious looking , altho healthy foods. Just the sight of some of the foods makes me wanna overeat... :D

The "Seitan & Scalloped Potatoes Casserole" was one of the best recipes in this book, i really loved it!! :nod: Hahaha, yes, it is hard at times not to overeat with all the scrumptious foods around, but that's the beauty of this way of eating, right? Don't have to count calories or portions. Plus, not everything I make is always a hit with hubby, so there is that... :eek:
