My hot cocoa recipe

FWIW here's how I make vegan reduced-fat hot cocoa: Heat up one cup of vanilla almond milk or soy milk on the stove (recommended) or in the microwave. Add 1 tablespoon Wonderslim cocoa powder (99+% fat- and caffeine-free) and 4 teaspoons sugar. (Wonderslim says to use 2 tsp but I find that's not eno...

Recipe: Chickpea soup

This is adapted from a recipe in Conveniently Vegan by Debra Wasserman. I added celery in place of two of the carrots, removed oil, and substituted vegetable broth for half of the water to improve the flavor. Chickpea soup Two 19-oz cans chickpeas, rinsed and drained [I used home-cooked] 4 carrots, ...

I have oatmeal almost every morning. Normally I cook it with soymilk (or almond milk depending on what's open in the fridge), mashed bananas, and applesauce. In the summer I'll add peaches and/or strawberries instead. I do have other things for breakfast, but oatmeal is the default. Other than oatme...

My hair would be salt-and-pepper if I didn't dye it - started going gray in my late 20s I think (I'm 39 now). Mother also had premature gray, has dyed her hair for as long as I can remember. She's never been vegetarian (though has eaten little meat for the last 20 years), I have been veg since age 2...

I live in a city with a large black population, and our one vegan restaurant is owned by a black woman. Are you in Baltimore? What/where is the vegan restaurant? I was there a couple of months ago and we had a good brunch at One World Café, and later a most excellent dinner at Great Sage in Clarksv...

Thanks for posting this. I am biracial as well: 1/2 black and 1/2 white. I was about your age when I first became vegetarian. Interestingly, my mother's - black - side of the family had fewer problems with it than my father's - white Jewish - side. I grew up eating SAD, but my mother after moving ou...

Career as a registered dietician

Hi Jeff - I am interested to know what it takes to get an RD, and what career opportunities there are in that field. In my opinion, the world needs more vegan nutritionists!

P.S. When Googling this information I found that March 11 is Registered Dietitian Day, so happy day in advance :-)

Dr McD gave a good lecture on vitamins during the Costa Rica trip. He said that the oft-stated pitch that we need vitamin and mineral supplements because the soils are depleted doesn't wash, because in modern times we get food from all over the world, not just from one farm where the soil might have...
